Nothing says Home like the Smell of Baking

The smell of banana bread baking in the oven brings me home. The whole baking experience brings back many memories. My mom is an avid baker and when growing up my sister and I were privileged to have the role as chief baking assistants (mummy’s helping hands). Indelible memories, beating/whisking eggs, grating apples (for apple crumble.. another recipe I hope to share with you in the near future), chopping mixed fruit and pecan nuts, melting baking chocolate etc..

The most desired role I looked forward to immediately the cake was put in the oven, was LICKING the leftover cake batter off the wooden spoon or the pallet knife (not to worry, it was the nylon type). Chocolate cake batter was the best. Yes! I am a big fan of chocolate cake, chocolate milk, more like chocolate everything 🙈.

I thought I would share with you how I made the banana🍌 bread. This is a very quick and simple recipe which I learnt from my mom and has been used over the years. I learnt from the best!

         Difficulty: Easy              Preparation: 10minutes                Baking: 1hour

Ingredients Instructions
250g flour

1-teaspoon bicarbonate of soda (baking powder would also do)

125g butter

125g castor sugar

2 eggs

3 large bananas(overripe bananas are the best).🍌🍌🍌

1 teaspoon vanilla extract

½ cup chopped pecan nuts & almond nuts*



*Almond nuts are optional

*I add a tablespoon of milk. Just because I really like milk. Otherwise that’s also optional.

-Preheat the oven to 180 degrees centigrade/ 350 degrees Fahrenheit / Gas mark 4

-Beat the eggs

-Mash/Blend bananas

-Cream the butter and the sugar

-Add the beaten eggs and mashed bananas

-Sift the dry ingredients and add to the mixture

-Stir in the chopped pecan nuts and almond nuts

-Bake in a pre heated oven for about 1 hour


-After removing from the oven, allow the bread to cool for a few minutes before transferring to a wire rack.

  1. I like how you have a quote in your blog related to baking, that makes it stand out among others. I love banana bread and have repeatedly tried baking it but my bread always comes out either too dry or too moist. Do you have any tips on how to avoid both of those situations?

    1. Thank you for the feedback. I appreciate it. Too dry could be caused by too much flour and too moist could be maybe the the number of bananas you use or the size. You could try medium sized bananas instead of large ones. I hope this is helpful.
