Last week Thursday was fun on so many levels. I had the privilege of baking with Mwape from Pink, Yellow and Everything Mellow. She is such a great baker. We were joined by two lovely friends Adele and Cho, who had never iced cupcakes before.
Love and laughter filled the atmosphere. I am pleased to say they thoroughly enjoyed themslevs and we will definitely be doing this again. I initially planned on trying fancy decorating ideas from the buttercream decorating books, but because we didn’t have much time we free-styled.
For those of you interested in my simple cupcake and icing recipe voilà:
Cupcakes- Butter 450g, Castor Sugar 450g, Flour 500g, 5tsp of Baking powder, 9 Eggs,and 2 tsp of Vanilla essence. Cream the butter and castor sugar until nice and fluffy, then add the eggs one at a time. Lastly fold in the flour, blend and fill the cupcake cases.
Bake at 160 degrees Celsius. This basic recipe makes about 24 to 30 cupcakes.
Icing– 250g butter blended until very light and fluffy and then gradually add 500g of Icing sugar and beat the mixture until light and fluffy. Gradually add some fresh cream and blend until smooth & well combined/ content with the texture. Remember icing is usually 2:1 icing sugar to butter. For a variety of colours, use various food colour.
